You can make ADRs (Advance Dining Reservations) 90 days prior to when you want to go.

If you are staying in a Disney-owned Resort, you can call at 90 days from your arrival date and make ADRs for up to 10 days of your vacation.

If you are staying off property- you can only make ADRs for one date at a time. So call 90 days out from each day, or wait until 90 days from your last day and hope to get all of them on one phone call. This is usually fine for all except the most popular restaurants.

Which restaurants allow reservations more than 90 days from arrival?

I believe Mickey's Backyard BBQ is the only place still taking reservations farther out than 90 days. I think they are still at 1 yr.

There are 2 other exceptions:
Wolfgang Puck's Cafe takes ADRs at 60 days for dinner.
Bistro de Paris (the "nicer" restaurant upstairs in France) allows ADRs are 30 days.

Those are the only exceptions to the 90 days rule.
