Is there any way to find out how long EMH evening times will be before we arrive?

As far as I know, evening emh are 3 hours beyond regular schedule.

Morning EMH are one hour before park opening and the evening EMH are for 3 hours after park closing for resort guest only.

It does say "up to 3 hours after park closing"' but I don't think I've ever seen or heard of it being less than 3 hours. So when you look up park times for each day that has evening EMH, just add 3 hours onto whatever that time says. For example..if it says that the MK is closing at 9pm on a night that has EMH, then resort guests can stay until 12am.
