If we have an ADR in MK for example. Does that use our park admission for that day? I hope this makes sense. We are trying to make our ADRs when we plan to be in that park but it's not always possible. We are planning to do both waterparks as well as Universal Studios and Seaworld. On one day we have an ADR for breakfast at Epcot and then we plan to do Seaworld when we come back that evening we plan to visit MK not Epcot.

This will work if you have the park hopper option on your ticket. To go to one of the park restaurants you need to use a day's admission. If you don't have the Park Hopper option, you're locked in for that park on that specific day.

That's correct.
Entering a park, even if it is just to dine, uses an admission day on the ticket.

If you have a Park Hopper- you can go to a different park of the same day. If you have a Base Ticket- you can only return to the same park on the same day.

If you have a Base ticket, you will need to arrange your ADRs so that you are dining in the park you plan to visit that day, or consider eating at resort restaurants that do not use park admissions.
