The Disney Show Translator (aka Ears to the World) are headset style devices that provide real-time, synchronized translation into French, German, Japanese, Portuguese or Spanish that work on a number of attractions around the resort (I know it is available on over 25 attractions, but I don't know the current exact number at the resort).

They are available at no additional daily charge, however a $100 refundable security deposit is required for each translation unit at guest relations locations in the park.

If you look at the attraction descriptions on the Disney World website they will indicate which attractions work with the personal translation headsets and is probably the most up to date source of information.

For example a majority of the film based attractions like MuppetVision 3D or It's Tough to be a Bug will offer real-time translation during the show.

Also, most attraction pre-shows will often offer translation (of course on the more thrilling attractions you'll be advised to remove the headsets and store them properly) but even attractions like Kilimanjaro Safaris surprisingly support translation services.
