unused days?

The last time we went to WDW my husband didn't feel well so he stayed at the hotel while we went to the parks on a few days. I'm pretty sure our park tickets did not have an expiration date. Is there any way to find out how many days are left on his ticket?

Without going to the parks themselves (or guest services there) there's no way to find out.

Out of curiosity, when was the last time you went? I don't remember when the exact cut off was, but there's a year when the tickets switched from being all non-expiring to the newer pay for non-expiring option. It'd be a good way to judge whether or not there's the possibility of there being extra days.

I know that we went in 2004 and I believe our tickets were non expiring back then (hopse so cause I think we still have a day left on them!)

That will be the old park hopper, so if you have unused days you should be able to use them. Bad news is, you can only verify at one of the Guest Services locations at Disney World.
